[Chrysler300] Thermal and Viscous Fans

I have a 67 300 with the hi performance 440. I recently had Jasper overhaul the engine and had a radiator from an A/C 67 Chrysler installed. I also had a Mopar performance 5 bladed clutch fan installed instead of my original 4 blade fixed fan. I had problems with temp creep during the summer months (now has a temp guage instead of the idiot lights). Temp was usually 180 as long as the car was moving. Once stopped at a light for a minute or so, the temp would start going up to 200 or 205. Once moving again and in a few minutes it was back at 180.
Stuck in suburban traffic, stoplight to stop light on 85 degree or higher days, the temps would creep up quite a bit. I've seen it as high as 215 - 220!!? I noticed the club sells viscous and thermal fan units for 300's up to the 65 300 L. Could I use one of these fans on my car, and do you think it would help.
BTW, the car does have the factory fan shroud too. It is a non-A/C car. Help if you can, I am not confident to drive the car during the summer in the all too often MAJOR traffic tie ups we have around here!!
