Matt, I'd check it with a mechanical gauge that is known to be accurate, then go from there. 
 
If the pressure dropped off all of a sudden, I'd be looking at the sending unit or an electrical issue with the gauge(s). How old is your oil pump, has it been rebuilt or replaced in recent years? You generally won't hear tapping or noise until you have pressure so low the lifters won't stay pumped up and bearings aren't getting the lubrication they need.

I replaced the Thermostat this weekend; so my cooliing issue is fixed!
(The issue where the car would warm up ALL the way to the hot, hot position and 
then it would cool back down)

Now....(Since just before I replaced the thermostat)...the Oil Pressure gauge is 
registering low.
Below half.
When doing 60mph is is at the first hash mark...like a quarter of the way up.

It is full of clean oil.
The valve train is not screaming or clattering.

Do I need to hook up a "numbers" gauge?
All of the gauges are 50,000 miles old after their great Jeff Carter 
restoration.

Anything else to check for low oil pressure?
