I've seen a 'gold' G..... ;) Travis, I think most would tell you to follow your heart and paint it a color that will make you happy, especially if you're planning on having a long-term relationship with it. The obvious color to use if you're restoring it and wanting to protect the value would be white, second to that would be an original 'G' shade, if those don't work for you then maybe a shade available in 1961 from Chrysler that you like. Beyond that, you're building a custom in my opinion and if you're doing a 'complete' color change, that's a difficult and expensive thing to undo. 
 
As far as white cars standing out, I would agree... with some exceptions; 300 letter cars being one of them. I think they look fantastic in white.

Hello Group. I brought my G a few months ago.It's off white and I'm
struggling with a color change decision. Red is what I'd love it to be. My
wife and friends say leave it white. Even strangers who stop to admire her
frown on a color change when asked. I'd like to ultimately show her and
white cars just do'nt seem to stand out like some of the others. I'd like to
stay true to the game,but white is... Has anyone ever seen a nice light
silver G?Any and all comments will be appreciated. Later,Travis
