OK.   Here's the deal on generator "polarizing".  Yes, it is sometimes necessary after a rebuild or after a long period of non-operating rest.  The reason is that the field coils wrap around a soft iron core that becomes strongly magnetized when in operation.  When shut down the magnetism diminishes, but a small residual magnetism remains---enough to excite the generator initially on the next run.  If that residual magnetism is lost during an extended rest, or rebuild, or is reverse polarized by different battery connection then it is necessary to re-establish that residual by "flashing the fields".
If the generator was tested after the rebuild it will probably not require flashing, but there's a possibility the the testing was done with polarity reversed from what your car's system requires.  The generator can be properly tested without respect to the applied voltage polarity.
My suggestion to you is that you install the generator completely and if it charges properly, no further action will be required.  If; however, it does not charge, then you should follow the prescribed method of for field flashing.  Most auto parts counter clerks are knowledgeable about parts, but only few are trained technicians.  Let's assume that your helper has given you a valid procedure and you should follow it.  If you doubt his competence then you should reference your factor service manual for help.  That information is usually included with the section labeled "removal and installation of the generator".
