My experience with a (non-300) car bought at a 2006 Scottsdale auction right after restoration was completed, aligns with Ron's "IMHO". The seller hyped the quality of the paint work, which looked awesome at that point, saying the restorers applied six coats of clearcoat. I moved the car from Scottsdale to Calgary, and while stored indoors, none of my garages are heated. Winter temperatures go down to -30F here. Within a year, the paint cracked on four panels. The restorers in Phoenix blamed the move to such cold conditions. 

At the same time, I was having my '66 Charger restored by a Calgary shop, using base /clear, and a very good match to the original ZZ spice gold. I took the "cracked car" to them, and their feedback was simple - way too much clearcoat, and inadequate drying time in between coats. And - no need for more than one coat if done properly. The Charger looks just as good as the crack paint did at the beginning, with a single coat of clear. The cracked car has since been repainted by the Calgary shop with no further problems, other than a lot of expense. As others have said, it's all about finding a competent shop. 

(This is also not a blanket criticism of Phoenix paint shops. One only has to attend a car show there, such as the awesome Goodguys shows, to see what the local shops can do. The best of the best are also there.) 

One final thought - water based base /clear is likely going to be a lot easier to match if the car gets dinged or scratched, and a small area has to be repaired.

IMHO, this is pure BS. 
  
Paint delamination can be caused by such factors as incompatible base coat/clear coat, insufficient dry times (probably what happened here) or lack of knowledge of how to work with the new technology. It is NOT caused by storing a car outside or by freezing/thawing temps.

A friend of mine had his 1965 "A990" Plymouth restored in California 2 years ago. This last year he had to have all the paint stripped off and the car repainted. The car had been painted with the California "eco-paint"/water-paint. My friend did not store his car the first winter in a "temperature controlled environment" as he did not know he was supposed to. The California paint lifted off in chunks over the whole car. He was told that the freezing and thawing temperatures during the winter here in Pennsylvania caused condensation under the paint. The car had to be stripped to bare metal. To add insult to injury, Pennsylvania has adopted this same California enviro-nonsense. My friend had to ship his car to North Carolina to have it re-done with real paint. 
  
I'm no expert - just relaying an incidence. Two different body shops concurred that this problem was "possible". I see you are in New York which has the same weather conditions.
