When i did my cari found a BB case and swapped in the guts from the poly 727. I flogged the pats a bit with an extra clutch and a fabrictaed governor along with afairanks street trans kit. Shift just above 6000 which suits the cam fine. 
Stroked 440? Well maybe but a Or style 440 will deliver all the power one could ever want for reasonable street use.
Stroked 400s are fun as wel. my favourite is the 426 froma 400 bild which we have done twice now. makes a 10 to one engine from a 400 with all stock parts and adds 26 cubes. That and a decent cam willl gove you a 361 383 look alike wth TEETH!
I have run the B&t for now some 35000 hard abusive miles ad not even a whimper so i am convinced there is no ned to change. My engine is not stock either and would occasionally lift the wheels on thee street till i put in the 355s and taller tires. (my wife didnt like the feeling of no steering on hard accelaration) I figured I had tested that jiont well and it seems to have no trouble daling with it. Dvorak told me it wold take it too Said he has run one in his record A/SA car for awhile with no problem.
Anyway you have nice models there and whatever you do will produce a wondeful vehcle.
