I am up against the same problem, so here is how I'm doing it: I'm rebuilding the front ends on my 64 Sport Furys this winter, converting to disc brakes at the same time. I'll toss all the old parts, except for the brake drum assemblies. It would be nice if I could figure out a use for the old torsion bars and strut rods, but they will probably go to the recycler. I have an old gas tank that's all dented up and several patches. It's going to the recycler as well.  I never toss a piece of trim, switches, or body pieces. When I rebuilt the rear end last winter, I did hang on to the race for the inner bearing as it makes a good striking surface to seat a new bearing race.

I never toss anything, much to my wife's dismay. Still have parts for cars I sold 45 years ago. As soon as you toss something, I guarantee that you or a buddy will need it.

Ok, I'm still in the reassembly stage with my Belvedere. As new parts go 
on I am starting to collect a lot of old parts. Is there any reason to 
save these old parts? Particularly old front suspention parts and the 
old fuel tank and lines. The tank has a hole in it btw. Space is running 
out in my garage and I'd like to discard some of this stuff.
