I vote with Akron Don's good advice. 

Also, you can use one of the newfangled small video digital recorders; they have come down in price a lot. Set it up and record as you take apart anything with multiple small parts, like under-dash. Store the digital files on a CD so you can play it back (backwards if possible) to help you remember how the heck that went together.... Of course, put the CDs in a place you can find them in a year! :) 

And put a big sheet of plastic under the car when it is stored out under cover to prevent condensation forming on the underside of the car.
