Rich is right; it will be just fine.  The 2 times the cubes is a rule of thumb and is far from the norm when dealing with a modified engine.  Again, as with camshafts, I have found it hard to over-cam and over carburate a modified engine...that being said, use a 600-650cfm carb on your stock Poly 318.
 
Don also said you cannot overcam a 440...(withing reason).
 
As for the modified Poly 318 or Wedge;  I run an 850cfm TQ on my 340 car and Rich can attest to no-bog...the engine loves it to the tune of mid to high 12's as a street car (a TQ is an anomaly; since the primaries are so small they gave up to 800cfm to stock small blocks...),
 
Rich's slightly modified dual quad Poly runs 1000cfm...works well doesn't it Rich?
