A complete overhaul is a big project for a first timer, my suggestion for your first engine would to be to pull the engine, strip it down to the block and rotating mass, and see where you are at with your confidence level at that point.
    I think that most people at this point would be happy to take their engine to a machine shop and let them go through it, setting clearances, cam timing, torguing  honing, boring if needed, cam bearings, frost plugs, and boiling,,,,, this is just some of the things that would need done,,,,,,once you get it back you would still have to paint it, install the heads, (which would probably have  been taken in to have a valve job done on them), install and adjust the valve train, oil pump, oil pan, fuel pump, intake and exhaust manifolds, water pump, install engine back in car, drop in distributor with the new cap and wires, install the new carb, (because engine looks to good to put that old dirty one back on), install alternator, hook up all the linkage, and wiring, and while it was out you of course wanted to clean up the engine compartment, put new seals in front of transmission,,,,, as you see, there are lot of thing to do when taking on the rebuild, after all of the above is done then you can start with all of the adjustments
