Your eng bay isn't that bad.  A good cleaning will make that look like new again.  As far as the paint goes on the trim I would think that you didn't prep it very well and that's why it's coming off.  I belive you would have to scuff up the stainless and then primer it, then paint it.  I'm doing something like that to mine as well.  But I'm not doing it in paint.  I'm doing an inlay that gets glued in.  I have not decided what inlay I'm going to do yet.  My friend has joked about Mother of Pearl......it would be really pretty, but so expensive.  I'm not doing it.  Hahahahha.  I do like the look you have done, just redo it if you like it and prep it before you paint.  I'm sure it will look amazing.
