We have to remember that Don D was a lot better tuner than "many" of us.  Proper timing, the right plugs, ect. ect.  All he had to be was "close" on the carb size for it to run good, and then tuning the carb covered any other issue.  Some of us (me) aren't as good or experienced as that.  That said, I have an Eddy 800 on my 383.  It's actually a 68 Road Runner engine, with a mild (484) cam and dual exhaust.  It came with a 750 Carter.  When something else isn't screwed up it runs great with that carb.  I have also run it with a good 650 Carter.  Throttle response might be a bit better, but even by seat of the pants,, when you get it to WOT you start to wonder what happened "to the rest of it".  Don also said that when using his simple formula, that when the engine is modified a bit, to err on the larger side.
I'm more experienced on motorcycle tuning, and small displacement engines are probably more fussy, but when you open up the intake and exhaust on those,, you had better be dumping more fuel in them too.  JMHO
