Since carbs are so easy to swap out you may want to go with the 750cfm Edelbrock  and see how your Stroker responds compared to the known driveability of the 600cfm.

As I'm getting closer to completion I need to select a carb for both brand and size. Right now I have at my disposal the following carbs:

I know there are all kinds of supposed formulas for calculating the right carb CFM per cubic inches, but as I recall some of it just depends on how that particular carb runs on that engine. I have the Edelbrock 600 at the top of the list on my car now and it runs very smoothly.
 
Edelbrock 600 CFM Square Flange
Edelbrock Competition 750 CFM Square Flange
Holley Double Pumper 750 CFM Square Flange
Thermoquad 750-800 CFM Small Primary
Thermoquad 800-850 CFM Large Primary

I guess this is mainly directed to Gary P as to what carb should be used, but I'm open to any other opinions.
