Look in the right places there's plenty of Mopar-powered race cars...

One of the TNF members has a Devin sports car with a De Soto engine, there was a Connaught sports racing car built in England with a De Soto Hemi as well, the Allards and Cunninghams raced in Sports Car racing in the early to mid-fifties often had Chrysler Hemi V8s.

Here's a racing car built in Australia in 1951 which featured a Plymouth flathead:
