Well the only way to get your afr steady would be with efi.  Yes you can dial it in for that particular day, but as soon as the temp or humidity changes, it's gonna be off.  If l had $2000 just kicking around l would be buying an efi kit.  Done a lot research on these kits and the two i would put on would be the Fitech or the Holley sniper kits.  The FAST EZ EFI would be my third option.  My reason for choosing the Fitech and Sniper systems are obviously price.  Plus they've got a shit ton of good reviews, and there's lots of youtube videos.  Everybody seems to be more than happy with the Fitech.  I haven't seen many videos for the Holley Sniper system, but I'm assuming they have happy customers as well seeing as they basically copied the Fitech systems.  But until l come up with the cash I guess I'm stuck with my 750 Edelbrock carb.  There's my 2 cents.

Thanks. I think it can help me find the sweet spot. I'm not teaching anymore with the exception of maybe geezer drags :-)  So I want it a bit leaner for good mileage. If that works!? I'll have almost 5000 miles to test it and I will try the 750 and the 600. I don't think the 500 can be saved. I tried to rebuild it using two different 500's and a bunch of new posts but it's still messing up. I may do a bit more work on it and try it again.
