2C: I can't think of a modern bucket seat the won't look at least somewhat odd in a 1962-1965 Mopar. The main trade-off is added safety with the Sebring seats (built in seat belts and whiplash protection from the high profile). As for the wiring, for me the best way is to concentrate on 1 wire at a time rather than looking at the whole spider's web of wires. Some (late '80's and 90's?) GM convertibles also had bucket seats with built in seat belts. If you don't care about the built in seat belts, then any contemporary bucket seats that are comfortable and adjustable will do.
