Take lots of pictures, don't trust your memory.

Buy lots of baggies and containers and mark each one. Bag stuff with a note inside then put all the stuff together in a container - simple example would be put the water pump bolts, (water pump?), pulleys and alternator mounting & adjusting bracket in the same container and make sure you know which bolt goes where.  You don't want to continually go searching through 20 boxes to find each item when it comes time for assembly.
