I think 3/8" each side will be enough and the bolts are long enough.  I have Poly-Loc motor mounts do I'm not expecting too much movement in the motor mounts.  Unless someone tells me of a downside to adding shims I'll give it a try.  The pan is just coming down on the pinch-weld part of the K-Member.

You can make shims yourself out of aluminum stock I recall.
