The "best" heads supposedly are the 1955 331 units. These are the infamous "triple nickel" units, from their casting number of 1556157. These heads had a fairly flat runner that flowed more air at low lifts than the later 354 and 392 heads, but any head would flow a lot if even slightly ported. The truck and industrial heads featured heavier castings and sometimes water heated crossovers. Also, some industrial units had the bolt holes for manifold attachment moved slightly (see HemiBob's comments on the Powerplay Swap site for details), so be careful there. Bottom line is that most hemi heads can be made to flow, and so the limiting factor becomes camshaft events, and how much compromise on idle quality you will consider.
