I'll start. Feel free to add to the data base with your own measurements.
I had my spare OE wheel (and tire) on for the last two days. I took it off today and before I put it back in the trunk, I measured the back-set at 3". I also measured the back-set on the 85 Dodge Diplomat 15" x 7" on 5 x 4.5" bolt circle cop-car wheels that I am running at the moment (for the last 3 years). They measure 4". This will be important if I go for American Racing TorqueThrusts next year.
The stock wheels are 56 Dodge D500 wheels. They are 5.5" across the bead which makes sense for a 56 D63 Dodge with 12" (Windsor) brakes according to the parts manual.
