I have seen forward look era cars with a gray primer/sealer finish under the hood and in the trunk area regardless of the exterior color. (My 58 Savoy was like that). Also some with body color.
What would be considered correct for a 61 Fury with sport tone paint?
And, is green the correct color for the hood hinge springs?

Hopefully someone with a '61 Plymouth can chime in, but I know on the '56 DeSotos the production plant was a factor that determined the color. Detroit cars had body-colored trunk underside and gray inner fenders, Los Angeles cars were dark gray trunk undersides regardless of body color with black inner front fenders. Ideally you can find a survivor '61 Plymouth that was built at the same plant as yours to compare.

I have (8) 61 plys. All the hood hinges are exterior body color. Any that have any paint on trunk floor left are body color.
Bottom side of hood are body colors.
The only variant is 2 of them have black inner fenders with black firewalls with a different exterior paint.
I was told that those were built in different plants
