sorry for the long hiatus... hoping the collective wisdom has an answer
have a 61 new yorker hardtop 4 dr (so no centre pillar)... needs lots of work, has olds rocket drivetrain so never can be original
lead on 60 saratogo 4dr sedan (with centre pillar)

i know alot of work but... is it just a matter of changing doors and cut pillar out to install the pillarless doors OR
have to snip roof at front/door pillars and rear, change doors on both cars to get the pillarless look on the saratoga

yes i know sounds like why??? the NY needs work, the saratoga needs nothing

The roof line is the same for 4DHT and 4D sedan 60, hypothetically, it should be possible to cut the center pillar, but I Think that you need the mounting for the 4DHT roof rail from the 61

Not sure on your cars, although, looking at the pictures of a 61 hardtop and sedan newyorker, I think I am right. Having rebuilt a 60 4dr sedan (dodge) and now building a 60 4dr hardtop (Plymouth), the only way to convert 1 to the other is to cut and swap the roof totally, including related rear 1/4 panel work and replacing the B pillar. Doors were also a different shape on the inside (I couldn't use the Plymouth door trims on the dodge).

To me, to much stupid work, if you don't want the sedan and want a hardtop, sell the sedan and buy a better hardtop. Be cheaper and easier and better
