As I slowly make progress on my project to convert my 315 hemi from PF trans to cast-iron TF trans, I start to learn about the adapter plates. In doing so, I've gotten and taken some photos that make me wonder why there is an "ear" on the adapter by the starter. In one case it looks like the ear might be there for a bracket for the exhaust pipe (because the clearance is almost nil), in another case (mine) it looks like there is already 3" or so between the exhaust so a bracket doesn't make any sense.

Anybody know why that ear is there?

Is the same plate used for MT cars? Looks like a clutch z-bar pivot location....

That sound potentially very plausible.

As far as I can tell, the adapter plates are NOT specific to Manual or Automatics (but maybe that Manual cars didn't need an adapter plate).

Here are a couple of things that would potentially support your thought(s):

That ear is a mounting point for the shift rod bellcrank on the '55 powerflite transmissions. Look at group 21 in the parts manual, it shows a good breakdown on the mechanism.
There is no reason you can't remove it on your application.

Thanks for that. So the "ear" was valid for 1955 because of the 21-30-285 bracket but by 1956 with the pushbuttons, they just left it on rather than having two parts in the bin.

By 57 the adapter was thicker, 1.125" and the ear was gone.

All I can say it is there for reason for something to be attached. Kinda like finding wires with plugs and not attached to anything.
