I have ordered a new gas tank for the 58 Desoto Sportsman coupe as the previous owner removed the original one probably due to rust and replaced it with a non mopar one. This creates a problem for me as there are 2 types of sender units a 75 -10 ohms and a 100 -15 ohms one. As I have no tank to check the one I need is there a way to find out through the wiring or by inspecting the gas gauge?

It uses neither one of them. The correct sender is 15-215 ohms. You can purchase it cheap through Rockauto. Part number SUCR05. Looks like they are currently out of stock, but tell them to notify you when they come available. I have some extras if you are in a hurry, but I would rather you get it through them.
