Is it (economical) possible to convert a 4/6 cylinder tach to 8?

You can, it will cost about $65 depending on what you need, but if your tach is a cheap aftermarket, it is usually better to replace it with another one.

Sid, I used Technoversions "Tach Match" with my vintage tach in my 1960 wagon. Product works, customer support has been good.
