If you would only load a rolling car, air in tires, no dragging brakes, etc, a 2000 lb will do it. You can double the line pull with a snatch block if necessary. However, a bigger one will cover more situations such as flat (or even no) tires, stuck brakes and the like. Right now I'm using a Central Electric (cheapo) 5,000 mounted on a Class III trailer insert which I can put into a socket welded onto my trailer, but remove to keep it out of the weather, as I ruined my last cheapo by leaving it mounted all the time. I got the idea from someone on one of my car mailing lists, maybe this one? Anyway, I suspect the more expensive name brands might be more weatherproof. When I bought a parts car down in Virginia, the junkyard loaded it the really easy way, with a giant fork lift, letting it down right on my trailer. Had a heck of a time getting it off though, it had sat for 22 years in the junkyard.
