Here's a fun read from "Route 66 Remembered:"
 
Says they were originally intended for cooling drinking water but also served as radiator cooling and spare water for boilovers.  Remember, carts didn't have pressure caps until the early 1950's.

I think you were supposed to use them to cool drinking water.  You're right, though, they were really common.
