My expectation is that as the factory bore was increased, the water jackets were also moved to maintain a constant wall thickness after factory machining. Thinner walls could mean increased heat tranfer to the cooling system and less meat for future over bores. 

I like to stay conservative on the over bore for wall strength and cooling system heat load. I would probably go to a 426, but if engine machine specialists say your remaining wall at 440 is OK, then go for it. Can 413 heads feed a 500 stroker?
