[Chrysler300] heater control valve operation

I don't have a '57- '59 to compare, but I would think it works similar to my
'61.  The lever you refer to is not simply off or fully open, the farther
you move it the warmer it gets and vice versa.  I have never seen one that
is just full on or full off.  The capillary tube and bellows works to
regulate flow while set somewhere in between full on and full off.  
 
In my '61 Chrysler owner's manual, there is an illustration showing a home
wall thermostat and it indicates that moving the lever is the same as
setting the thermostat in your home, thus regulating air temperature for
comfort.

Do you know what valve they would control in a 57-59? Seems the system on my
59 just has off, lo, hi settings (for the fan I assume), and a lever to
operate the heater control valve from off to full open. I don't pretend to
fully understand these systems, but remain puzzled what the capillary tube
contributes. Thanks.
