Be sure to replace with a 180 degree stat.  For another big block car I 
have I bought one that is touted to never stick.  It's a Stant 
"Superstat" which has so far worked well.  It supposedly activates with 
every startup.  Good luck with your problem, and I agree with Gary that 
the stat is most likely your problem.
