Go for Dot 5 (silicone) if you can.  Requires replacing all wheel cylinders, master, and flushing lines.  
Dot 5.1 is not silicone and will grab onto moisture like Dot 3.  
Otherwise looks like you could just bleed everything thoroughly with 5.1, but, it will still soak up moisture at your wheel cylinders.

I just saw this article (see below) in the latest Rock Auto newsletter.  And not wanting to do something that would cause break, I mean brake failure, would I be safe to say if I replaced (complete flush) Dot 3 with Dot 5.1 in my G, I would not be compromising safety?
