Advertising touting premium fuels drive me nuts for the exact reasons already stated.  Unless you need it, because of higher compression (turbo/superchargers included) or you want to advance the timing, it is a waste of money and your car may actually run worse.  

Simply put the higher the octane, the harder the fuel is to ignite.  

Now the additives in regular vs premium may differ and each brand of fuel may be blended differently. The formulation also changes with the seasons so it's a moving target.

Ethanol content will usually be lower in premium (91 octane here in canada) and the best premium is generally considered to be Shell or Esso.  Ethanol will raise the octane rating of fuel but it has less energy potential than gas and your MPG will often suffer.  There is 94 octane available here and it will often have a higher ethanol content to achieve that rating so your results may differ.

Race gas is another topic, but will work better (as a general rule) on an untouched original engine as it has more similar content to the fuel available when our cars were new in addition to the higher octane)
