I hear ya on having the original equipment for the next owner .  I have the original engine, original tranny and the original rear laying here, that will go with the car when I sell it, or when the kids do after my demise.  But really, I figure it's my car, enjoy it now.  What happens to the next owner is his problem.  With the newer rear housing, you can swap in anything as far as gears, sure grip, bearings, brake parts ect.  So much easier, and if you can find a 66 b body rear housing, it's actually a bit narrower than what you have now.  
As far as an easy swap for the next owner, you are looking at unbolting the shackles, eight bolts at the spring mounts, and unhooking the brake line,emergency brake,  and the 4 bolts at the u-joint.  not a big deal.  In my opinion, the next owner should be happy that you made the switch to the newer rear housing.  Unless you are going concours, no judge would ever know you had a few year newer housing under the car.   As far as a fun rear diff ratio.  I found the 3.55 that was in my Superbird was the best all around ratio.  That said, I have run many 3.23 rears with good results, just because you don't run crazy RPM at highway speeds.  Your car.... do what you want and have fun !!!
