Is there a way to tell which engine was original in a 1960 Dart from the data plate on the firewall?

There really isn't. But there are two ways you can find out what type of engine came with the car: one is to have the Chrysler historical folks do a record search for you using the VIN, and the other is if you suspect it had or currently has a ram-inducted engine, you can get Darrell Davis' book which lists all ram D-500s by VIN.
