I've read the post on using CV boots on driveshafts and was compelled to go that route.
Then I saw this video post on another site, and the process really didn't seem as difficult as some have made it out to be.

Has anyone else used this method to install a new boot on a driveshaft?

Yep, that's the way to do it - I never tried the straps though, always worked them through with hands only

really good video . i've always used the rounded off end of an old screw driver to start the leading edge , then grabbed the edge with a set of wide mouth pliers and worked the leading through
evenly til it was all the way through . the video takes a lot of the how to out of what some really do think of as a chore . i've never thought of them as being hard to replace , just expensive til

great video... but is it just me, or did he forget to re-install the shims that go between the driveshaft and the bearing? :D (I've only done that about a million times... what can I say, neutral drops are hard on those things!)

I thought he might have forgotten them too. Maybe the new bearings had new ones stuck on with all the grease.
