Went to the gas station today and filled the tank. Pulled out and jumped on the freeway and I noticed the fuel gauge freaking out!

Never seen this before. I suppose it has to do with sending unit being over stimulated. Or something.....

Like all our analogue gauges, they need a good 12V reference signal and typically a good ground. So your issue could be related to an intermittent voltage regulator issue or a flaky ground. Or something else, i.e. a flaky rheostat winding in the sender.

Good luck.

Agree that it's a loose ground. I'll bet that if the car is standing still, it's not jumping around like that.

IIRC, it's grounded thru the tank. So I would bet that the sending unit is loose. There is a rubber O-ring that goes between the sending unit and the tank. Verify that that is in place and that it's holding the sending unit firmly against the retainer.
