You are better off having the shoes ground than having drums that are too thin. If your drums are that good, then be happy and deal with having the shoes made smaller. Brakes shoes were available both in standard size and over size for turned drums. This has come up before. Have the shoes sized and arced to fit the drums. You will be more satisfied with the finished job if you do.

INCH TO FIT, EVEN WITH ADJUSTMENT ALL THE WAY. NORMAL?

HE SPECULATED THAT THE DRUMS HAD BEEN REPLACED AT SOME POINT BY ANOTHER AND THAT WAS THE REASON. HE TURNED THEM BUT DIDN'T WANT TO MAKE THEM TOO THIN.

That is safer, but even with a single pot, the car can be stopped with
the emergency brake, as long as the driver knows how to use it. If that
brake isn't functioning, the car should not be on the road.

The move to the dual MC was a safety move. At least now if you lost a
wheel cyclinder on one end or the other you can still stop. Not great
but you can slow down and stop.

Also assuming the primary & secondary shoes are in the correct >
orientation. I learned this on a 63.I had one side reversed & the

Assuming everything elses has been checked or is new, possibly the
emergency brake isn't adjusted properly. If the rears are dragging,
applying the service brakes could lock them up rather quickly. 
 
Also, flushing the lines will not necessarily get all the crude out,
