My '57 Chrysler does that too. I'm guessing at a few things. First is the lack of a fuel tank vent system. The second is that filler neck is wide open and doesn't have the unleaded restrictor that modern filler necks have. Third is the angle and depth of the filler neck into the tank. The air and fuel pressures in the tank reach the critical point in a hurry. The pump nozzle is sitting in that wide open filler pipe and doesn't sense any pressure build up until its too late.
 
I've had some luck with a pause and a quick bumper shake to burp the tank.  Sometimes I still guess wrong...
