My guess is possibly 2 things.
 
Sending units do get "weak" sometimes, and you should maybe run a small mechanical oil pressure gauge just to make sure.
 
Also, being as hot as it was, you might have just a case of hot oil, Since in the old days when those cars were built, you might just run 20 or 30 weight oil in it. I'm the eternal optimist, but I'm still struggling with multi-viscosity oils, I've never quite figured out how it can be 10w, and 30 (or whatever) too. Just my thoughts.
