My 57 Dodge CRL had "undercoating" as an optional extra on its factory
build sheet, so it was done in Detroit.

I thought undercoating was done at the dealership and not at the
factory? If this is true then the hood pad theory isn't accurate.

I would use Permatex Clear RTV Silicone
Adhesive. And, yes, 57-8 Plys did have a hood pad.
